Vegetarian Curry Soup - Easy One Pot Curry With Potatoes, Carrots and Spinach

INGREDIENTS 

  • 2 tablespoons minced garlic
  • 2 tablespoons coconut oil
  • 2 tablespoons curry powder
  • 1 can yellow curry paste
  • 2 tablespoons tomato paste
  • 3 yellow potatoes
  • 2 carrots
  • 1 yellow onion
  • 1 red onion
  • 1 container vegetable broth (32 fl oz)
  • 1 can of coconut milk (13.66 fl oz)

DIRECTIONS 

  • Start by heating your soup pot to medium high heat. Add the coconut oil and let it melt. Then, add the curry paste tomato paste and curry powder. Stir around and cook for about a minute. Then add the garlic and stir for another 30 seconds to warm the garlic.
  • Add the broth and the coconut milk to the pot and stir till blended.
  • Add the onions, carrots, and potatoes to the pot and stir.
  • Cover and let cook for one hour stirring occasionally.
  • After one hour add the fresh spinach and cook again for another 30 to 45 minutes stirring occasionally.
  • Serve with a hard boiled egg and or some air fried paneer if you are feeling fancy!
