Shrimp Tacos Recipe - Garlic Butter Shrimp, Black Beans, Veggies, and Rice

Ever wanted to have some seafood for Taco Tuesday? These garlic butter shrimp tacos and easy to make and are delicious! Best of all, tacos are the perfect vessel for hot sauce!

Ingredients

  • Frozen shrimp (use 3 per taco so add up however many you need)
  • 1 stick of butter
  • 6 small sweet peppers
  • 1 small yellow onion
  • 1 jalapeno
  • 1 can of black beans
  • 1 cup white rice
  • Homemade sazon (or store bought Sazon)
  • 2.5 tablespoons white vinegar
  • 3 tablespoon minced garlic
  • 1 tablespoon garlic powder
  • Salt and pepper to taste
  • Some kind of oil (olive, coconut, veggie)
  • Tortillas 

Directions

Preheat oven to 400 degrees.

Rice

  • Fill up a coffee cup with dry white rice
  • Rinse the rice in a strainer to remove dirt and debris
  • Add rice and 1 tablespoon of oil to your rice maker
  • Fill the same coffee cup up with water
  • Add water, salt, and some butter to the rice make
  • Stir ingredients then turn rice maker onto the cook cycle

Beans

  • Open a can of black beans and pour into a smaller size sauce pan
  • Add about a tablespoon or so of white vinegar, a tablespoon (1 packet) of sazon, and a tablespoon of minced garlic to the sauce pan
  • Put onto medium low heat and cover
  • Cook for at least 20 minutes stirring occasionally
  • Add salt and pepper to taste

Shrimp

  • Spray the bottom of a pan with non stick spray
  • Add frozen shrimp to the pan
  • Sprinkle with 1 tablespoon of garlic powder, 1 tablespoon of minced garlic, and at least half a stick of butter
  • Place into a 400 degree oven
  • Cook for 20 minutes stirring halfway through

Mixed Veggie

  • Julianne the onion, sweet peppers, and jalapeños then add them to a large pan
  • Sprinkle with a dash of white vinegar, 1 tablespoon of oil, 1 tablespoon (1 packet) of sazon, fresh ground pepper, and salt to taste
  • Mix everything up to coat the veggies with the oil and spices
  • Add some sprinkles of minced garlic to the top
  • Place into a 400 degree oven
  • Cook for 10-15 minutes
