Easy Air Fryer Al Pastor Tacos Recipe

Ingredients

For the Marinade

  • 1/2 cup pineapple juice (from canned pineapple)
  • 2 tablespoons vinegar (white or apple cider)
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon annatto powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon chipotle peppers in adobo sauce, minced (optional for extra heat)
  • 1-2 tablespoons Very Muy Rico hot sauce

For the Tacos

  • 1 lb pork chops, tenderized and thinly sliced into strips
  • 1 can of pineapple chunks, drained
  • Small corn tortillas
  • 1 onion, finely chopped
  • Fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

Tenderize and Slice the Pork

Use a meat mallet to tenderize the pork chops on both sides.
Slice the tenderized pork chops into thin strips for easier marination and cooking.

Marinate the Pork

Combine the pineapple juice, vinegar, garlic, chili powder, paprika, cumin, oregano, salt, pepper, chipotle peppers, and 1-2 tablespoons of Very Muy Rico hot sauce in a bowl to create the marinade.

Add the pork strips to the marinade, ensuring they're well-coated. Marinate overnight if possible, or for 30 minutes to 1 hour at minimum. 

Prep the Pineapple

If desired, cut the canned pineapple chunks into smaller pieces for easier taco assembly.

Air Fry the Pork

Preheat your air fryer to 400°F (200°C).

Cook the marinated pork strips in the air fryer basket in a single layer, avoiding overcrowding, for 6-8 minutes, flipping halfway through, until crispy.

Air Fry the Pineapple

Air fry the pineapple chunks for 2-3 minutes to warm them up and add a slight caramelization.

Assemble the Tacos

Warm the corn tortillas, then add cooked pork strips and pineapple chunks.
Top with chopped onion, fresh cilantro, and a squeeze of lime juice.

Serve

Serve the tacos with additional Very Muy Rico hot sauce on the side! 

Tips

Marinating: Tenderizing the pork before marinating helps it absorb flavors faster and more deeply.

Crispiness: Cooking the pork strips in a single layer in the air fryer ensures they get crispy. Don't overcrowd the air fryer basket.
