  • 8 large eggs
  • 1/2 cup blended cream cheese
  • 1 cup dices sweet peppers
  • 1 cup diced white onions
  • Cheddar and smoked gouda cheese slices (8 slices of each)
  • 16 oz of steak (we used ribeye) 
  • 8 Large tortillas 
  • 1 teaspoon Garlic Powder
  • 1 packet Sazon
  • Very Muy Rico hot sauce
  • Salt & Pepper 
  • 4 tablespoons of butter

For the sauce:


  • Dice up your peppers and onions and set aside. Preheat the oven to 350 degrees F. 
  • Get the steak going! Season both sides  of room temp steak with salt, pepper, and garlic powder then turn on an iron skillet to high heat. Once the pan is hot sear each side of the steak for 4-6 minutes depending on how well done you like your steak. Once the steak is done searing move it to a piece of aluminum foil. Add 2 tablespoons of butter on top of the steak and wrap in foil. Let sit for at least 5 minutes before cutting to let the juices absorb into the meat!
  • Crack the eggs into a large mixing bowl. Blend the cottage cheese until there are no lumps. Whip the blended cottage cheese into the eggs along with the sazon, garlic powder, pepper, and salt. Once the eggs are fluffy add the peppers and onions and mix well. 
  • Bring an oven safe pan to medium high heat. Add 2 tablespoons of butter and let melt. Pour in the egg mixture. Stir the mixture a few times, cover with smoked gouda cheese slices and then put the pan into the oven. Cook at 350 for 15-20 minutes or until the egg is not runny and cooked all the way through. 
  • While the eggs are cooking in the oven prepare the sauce. Mix all ingredients together in a small bowl. Super easy!
  • Once the eggs are done you are ready to assemble the burritos! Add cheese sliced to the tortilla, then egg mixture, then steak, and finally top with the sauce! Roll them up and enjoy with more Very Muy Rico Hot Sauce!

TIP! Make these ahead of time and keep them in the freezer! Cook in the microwave or oven for an easy meal prep burrito!
