  • 1 pound ground bison
  • ½ pound Mexican ground chorizo
  • ¼ cup yellow onion, chopped
  • ¼ cup pickled jalapeños, chopped
  • 1 fresh chili pepper of your choice, chopped (Jalapeno, Cheyenne, etc)
  • 2 tablespoons cilantro, chopped
  • ½ cup bread crumbs
  • 1 egg
  • ½ teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon Very Muy Rico hot sauce
  • ½ teaspoon oregano
  • Salt and pepper, to taste


  • Heat smoker to 350℉.
  • Combine all of the ingredients in a large bowl.
  • Spoon portions out and roll into balls. Make the balls about 2 inches thick.
  • Place the balls onto a baking sheet.
  • Put the baking sheet directly onto the grill.
  • Smoke for about 30 minutes, turning halfway through.
  • You can keep these warm in your crock pot, and use a can of enchilada sauce to keep them juice and not drying out!
  • Serve with some spicy ranch dressing or make sandwiches!!

We used the Pit Boss Pellet Smoker grill set to 350 and it turned out amazing!
