INGREDIENTS
- 1 pound ground bison
- ½ pound Mexican ground chorizo
- ¼ cup yellow onion, chopped
- ¼ cup pickled jalapeños, chopped
- 1 fresh chili pepper of your choice, chopped (Jalapeno, Cheyenne, etc)
- 2 tablespoons cilantro, chopped
- ½ cup bread crumbs
- 1 egg
- ½ teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon Very Muy Rico hot sauce
- ½ teaspoon oregano
- Salt and pepper, to taste
DIRECTIONS
- Heat smoker to 350℉.
- Combine all of the ingredients in a large bowl.
- Spoon portions out and roll into balls. Make the balls about 2 inches thick.
- Place the balls onto a baking sheet.
- Put the baking sheet directly onto the grill.
- Smoke for about 30 minutes, turning halfway through.
- You can keep these warm in your crock pot, and use a can of enchilada sauce to keep them juice and not drying out!
- Serve with some spicy ranch dressing or make sandwiches!!
We used the Pit Boss Pellet Smoker grill set to 350 and it turned out amazing!
