Smoked Elotes - Grilled Corn with Mayonnaise, Cotija Cheese, and Tajin Seasoning

INGREDIENTS

DIRECTIONS

  • Heat smoker to 350ºF.
  • Pull the outer husks down the ear to the base. Take away the silk from each ear of corn by hand. Fold husks back into place 
  • Put the ears of corn in a large bowl of cold water with 1 tablespoon of salt. Let sit for 10 minutes.
  • Remove the corn from the water and shake the water off. 
  • Put the corn on the grill for 15 to 20 minutes. Turn it every 5 minutes or so. The kernels will be soft and juicy when poked with a fork. 
  • Peel the husk back and smother the corn in mayo. Then roll the corn into crumbled cotija cheese to cover it. 
  • Sprinkle the outside with Tajin seasoning
  • Serve each cob with Very Muy Rico hot sauce and a lime wedge.

We used the Pit Boss Pellet Smoker grill set to 350 and it turned out amazing!
