Fried Mac And Cheese Bites Recipe

Mac and cheese is a classic comfort food that everyone loves. In this recipe, we turned it into an appetizer that is perfect for parties! These mac and cheese bites are easy to make and even easier to eat. They are fried until crispy and served with a delicious hot sauce and ranch dressing. So good, no one will be able to resist them!

For the mac and cheese:

  • ½ teaspoon kosher salt, plus more for boiling
  • 8 oz elbow macaroni, dried (we used Banza)
  • 4 tablespoons butter
  • ¼ cup all purpose flour
  • ⅛ teaspoon freshly ground black pepper
  • 1 tablespoon garlic powder
  • 1 teaspoon garlic powder
  • 1 ½ cups whole milk
  • 2 tablespoons Very Muy Rico Hot Sauce
  • 1 cup shredded yellow cheddar cheese
  • 1 cup shredded low moisture mozzarella cheese

For assembly:

  • 3 cups vegetable oil (for frying)
  • 2 large eggs
  • 1 tablespoon water
  • 1 ½ cups panko bread crumbs
  • kosher salt, to taste
  • Very Muy Rico Hot Sauce and Ranch, for serving


  • Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package instructions until al dente. Drain, rinse with cold water to stop cooking, and transfer to a large bowl.
  • Return the pot to medium heat. Add the butter, flour, ½ teaspoon salt, garlic powder, onion powder, and pepper and cook, whisking, for 2 minutes, or until the butter is melted and the mixture is evenly combined. While whisking constantly, slowly pour in the milk and cook until the sauce starts to thicken, 3–4 minutes. Add the hot sauce into the mixture along with the milk. Turn heat off and add cheddar cheese, then stir until the cheese is melted.
  • Pour the sauce into the bowl with the macaroni and stir until the pasta is well-coated. Add the mozzarella cheese and stir to combine. Let cool for about 20 minutes in the fridge. 
  • Line a baking sheet with parchment paper. Scoop the mixture into 1½-inch bites, rolling into smooth balls, and place on the prepared baking sheet. Freeze for at least 20 minutes.
  • Heat the vegetable oil in a heavy deep pot over medium-high heat until the temperature reaches 375°F (190°C).
  • In a shallow bowl, whisk together the eggs and water until well-combined. Add the panko bread crumbs to a separate shallow bowl. Coat the mac 'n' cheese bites in the egg wash, then cover completely in the bread crumbs.
  • When the oil is hot, add the mac and cheese bites to the hot oil and fry for 2–3 minutes, or until golden brown. Do not overcrowd the pot! Transfer to a paper towel-lined plate to drain excess oil. 
  • Arrange the bites on a serving platter and serve with ranch dressing and more hot sauce!
