Buffalo Cauliflower “Wings” with Spicy Sauce On The Pellet Smoker

For The “Wings”:

  • 1 Head cauliflower, cut into florets
  • 2 Tablespoon Olive oil
  • 1 Tablespoon sazon (or store bought Sazon)
  • Sprinkle of sea salt

For The Sauce:

  • 2 Tablespoon Very Muy Rico hot sauce
  • 1/2 Teaspoon maple syrup
  • 1/2 Teaspoon worchestire sauce
  • 1 Tablespoon butter, melted


  • Set the temperature to 350℉ and preheat with the lid closed for 15 minutes.
  • On a sheet pan, add the cauliflower florets and toss with spices, and olive oil. Spread the florets out evenly.
  • Place the sheet pan directly on the grill grates. Close the lid and cook for 25-35 minutes, until the florets are cooked through and lightly browned. Toss them once halfway through cooking.
  • Make the sauce. In a large bowl, combine the hot sauce, maple syrup, worchestire sauce, and melted butter. Mix real good and stuff.
  • Remove cauliflower from the grill and toss with the sauce. 
  • Serve with homemade ranch dressing!
